
The Campisi family business was founded in 1854 in Marzamemi (SR), a small fishing village rich in traditions tied to fish processing.
Linked to the sea for over a century, Campisi Conserve produces and processes a wide range of seafood products — from bluefin tuna, swordfish, and amberjack to fine bottarga and mosciame (tuna ham), as well as refined fish-based pestos and pâtés. The use of ancient techniques dating back to the Arab period, perfected over time — such as the drying and curing of tuna products in ideal climatic conditions — has made the Campisi family a faithful guardian of nearly extinct traditions.
Salvatore Campisi states:
“Our goal is to continuously rediscover the products that have shaped the history of our land. We have brought back to market the famous Garum Excellens, a fish- and spice-based condiment used by the ancient Romans in the 5th century B.C., now highly sought after by traditional cuisine connoisseurs.”
It is worth noting that Marzamemi is part of the municipality of Pachino. In recent years, Campisi has also expanded into the processing and transformation of agricultural products, foremost among them the “Red Gold of Pachino” — the Pomodoro di Pachino IGP, renowned worldwide for its extraordinary sweetness.
One of the company’s most successful products is its tomato sauce, made from ribbed or cherry tomatoes. Paolo Campisi assures:
“The processing method remains the same as that traditionally passed down through generations by local inhabitants. The authenticity, freshness of the raw ingredients, and strict quality controls guarantee the highest standards.”
This commitment reflects one of Campisi’s core values — its ethical code. Aware that it lives off the fruits of the land and the sea, the company respects the environment by using certified and traceable products, such as Pomodoro di Pachino IGP, and fish caught exclusively by line, never by large-scale tuna netting, in keeping with a healthy human–nature balance.
